A short introduction
What is Taiwanese breakfast?
In Taiwan, breakfast happens outside the house. Small shops open early, the griddle is already hot, and people order at the counter on the way to work or school. It is fast food in the best sense: cooked to order, eaten warm, usually with something to drink in the other hand.
The staples are simple and savory. Fan tuan (also spelled fantuan, 飯糰) is a sticky glutinous rice roll pressed around savory fillings and rolled tight, so it holds together in one hand. Dan bing (蛋餅) is a Taiwanese egg crepe: a soft, slightly chewy mochi-like crepe cooked together with egg, then rolled and sliced. Turnip cake (蘿蔔糕), sometimes called radish cake, is griddled until the edges go crisp. Almost all of it is washed down with soy milk (豆漿), served warm or cold, sweet or unsweetened.
What is fan tuan?
Fan tuan, or fantuan (飯糰) is a Taiwanese sticky rice roll commonly eaten for breakfast. Warm glutinous rice is pressed flat, layered with savory fillings, then rolled tight and wrapped so it can be eaten with one hand on the way to school or work.
What is dan bing?
Dan bing (蛋餅) is a Taiwanese egg crepe and one of the most popular breakfast dishes in Taiwan. A mochi-like crepe (offered thin and crispy or thick and chewy at Egg & Soy) is griddled together with egg, then rolled and sliced. Many people know it simply as an egg crepe.

“I’ve been asking for a legit danbing place for years and there’s finally one in NYC!!! Whenever I visit Taiwan I would eat a cheese danbing every morning because I know I can’t get it back home. This place is the real deal they make the batter from scratch (none of the frozen skin BS) and it’s QQ on the inside and crisp in the outside 🤤”

“The turnip cake wowed me!! I wasn't expecting that level of crispness and the crunch was so good. The dan bing was soooo good. Great dough, crispy on the outside and soft on the inside. The black pepper noodles were so good too, especially paired with the fried chicken, such a great combo!”

“Cool new Taiwanese breakfast spot! The freshly made Fan Tuan (rice roll) with egg was excellent, the turnip cake was perfectly crispy, and the egg crepe with Taiwanese sausage all brought me back to Taiwan. The real standout was the matcha soy milk, which was made with authentic soy milk. It’s such a genius combo, love it.”
